Ingredients for manchuri

1. Cauliflower florets 1 cup
2. Maida/ all purpose flour 1/2 cup
3. Rice flour/corn flour 2 tsp
4. Green chilli, ginger and garlic paste
5. Crushed black pepper powder
6. Salt

Ingredients for manchurian masala

1. Onion chopped (spring onion preferred if available, else normal onion will do)
2. Fresh Ginger and Garlic chopped
3. Green chillis chopped
4. Capsicum (optional) chopped
5. Soy  Sauce and Chilli sauce ( if not available, normal Tomato sauce will do)
6. 1 tsp rice flour.

Following are the steps

1. Make a batter from maida, rice flour ,green chilli ginger garlic paste ,black pepper and salt mixing water
little by little. Batter should be medium consistency like that required for pakodas(bhaji) and dip cauliflower
florets in it so they are coated properly.

2. Heat oil in pan/wok and deep fry the coated florets till point they start turning golden. Then put on tissues
to soak excess oil.

3. In other wok, put some oil (used in step 2 preferably), and when it heats up, put chopped ginger, garlic, green chillis and onions(capsicum and spring onion leaves optional, if you have).
Stir till onions become translucent. Then add Soy sauce and chilli sauce( optionally tomato sauce).
Stir for some time, then add water as per gravy you want, add salt to it. Then add rice flour to thicken
the gravy. And when gravy thickens and sauce looks cooked, dip the fried florets in it. Stir till all florets
are coated in gravy and turn off the heat.

And thats it :) Yummmmm.. gobi manchurian is ready.
