Vegetable Soup - easy and nutritious

Ingredients

1. Spring Onions leaves  1.25 cup and its onion chopped
2. Shredded cabbage 1.25 cup
3.  Carrot pieces 1 cup
4. Garlic chopped 1 tsp
5. Black pepper powder 1/2 tsp
6. Butter/ghee 1 tsp
7. Green chillis 2/3 (as per hotness required)
8. Salt
9. Ginger 1 inch chopped (optional, if you like the taste)

Following are the simple steps.

1. Pressure cook all vegetables i.e spring onion leaves and cabbage(1 cup of each, keep remaining half cup ) , carrot pieces ,ginger and  green chillis for 1/2 whistles.

2. Make a puree in grinder of cooked veggetables.

3. Heat butter/gheein saucepan/vessel, add chopped garlic and saute till raw smell of garlic goes away. Add black pepper, then add chopped onion(from the spring onion), remaining leaves of spring onion and remaining cabbage . Saute for 1 minute,make sure crunchiness of leaves and cabbage remains.

4. Add puree of vegetables and add salt. Now cook for about 2 minutes. And yummy vegetable soup is all done.

Tip : You can add bell pepper to vegetables while cooking,it will add to flavour of soup.
