Ingredients
Vegetables
1. Mushroom 250 gms
2. Capsicum(simla mirch) 1 cup diced into sqaures
3. Peas 1 cup(optional)
4.Paneer(optional)
You can use any combination of above vegetables.
For Masala
1. 1/2 cup onion diced
2. 4/5 green chillis (accordance with hotness you like)
3. 1 inch ginger cut
4. 4/5 big cloves of garlic
5. 1Cup tomato diced
6. 8/10 cashews
For Tadka
1.Oil/ghee 2 tsp
2.Jeera 1 tsp
3.Haldi 1/4 tsp
4.Coriander powder 1 tsp
5. Garam Masala 1 tsp
6.Salt
7. Red chilli powder 1 tsp.
8.Little cream
For garnish
1. Coriander
2.Cream/Malai.
Grind these all these ingredients together to form a paste.
Following are the simple steps.
1. Heat oil/ghee. Add hing(asfotedia),jeera and haldi. Then add the paste made above and saute for
2 minutes.
2. Add red chilli powder, coriander powder and continue saute for 1 more minute.
3. Now add capsicum and green peas and saute till masala becomes greasy that is starts leaving oil.
4. Now add mushrooms and continue cooking. Add salt. Because of mushroom's internal water and salt, masala will start getting watery. Check consistency you want or add little water.
5. When mushroom is almost cooked, add garam masala and cover the lid to cook for 2 minutes.
6. Then add little cream ,mix thoroughly and cook for 1 more minute.
Your Veg Kadhai is ready. Dont forget to garnish with coriander and little cream. :)
